Easy Orzo Fish

This dish is easy and nutritious, using ingredients from the freezer. High in carbohydrates, this dinner can be cooked in well under 30 minutes to fuel a tough training session.

Serves 2 - 4


Ingredients:

  • 2 garlic cloves

  • 175 g orzo

  • 400 mL vegetable stock

  • 4 frozen cod fillets

  • 125 g frozen peas

  • 125 g green beans

  • 8 asparagus tips

  • 1 lemon

  • 80 g feta

  • A small pack of dill


Method:


Put a saute pan on low-medium heat and add a glug of olive oil. Finely slice two garlic cloves and add to the pan for a couple of minutes. When the garlic smells fragrant, toast the orzo for a few minutes.


Once the orzo is lightly toasted, add the stock to the pan. Nestle 4 cod fillets in the pan and put the lid on for ~ ten minutes until the fish is cooked.


Once the fish is cooked, add the peas, beans and asparagus tips. Gently stir them through, being careful not to break up the fish. Place the lid on for another three minutes.


When the veg is cooked, squeeze over the juice from the lemon and scatter over the feta and dill fronds.
