BBQ Prawn Skewers

Prawns, like most seafood, are an excellent source of protein and nutrients. This is a great high carb dish for those tough summer workouts and races.


Prawn skewers-

3 garlic cloves, crushed

1 tbsp paprika

4 tbsp olive oil

400g large prawns

200g padron peppers

Grain Salad-

2 pouches of mixed grains

1 tub of olive + cheese deli mix

2 spring onions, diced

1/3 jar sun dried tomatoes, thinly sliced

30g toasted flaked almonds

1 pack mixed salad leaves

3 tbsp olive oil

1 tbsp sherry vinegar

Romesco sauce-

100g blanched almonds

1 jar of roasted peppers

1 clove of garlic, crushed

1 tbsp sherry vinegar

1 tsp paprika

50 ml olive oil

1 bunch of tender stem broccoli



Light the BBQ. You want the coals to be white before you begin cooking. Alternatively, use your grill on high heat.

Make the marinade. Mix the oil, garlic and paprika; pour the marinade over the prawns and leave in the fridge while you prepare the rest of the meal.

Cook the mixed grains according to the instructions on the packet. Mix through the other ingredients and season.

For the romesco sauce, place all the ingredients, except for the oil, in a blender. Blitz until you have a thick paste. Reduce the blender to a slow speed and slowly add the oil until it’s all incorporated.

Thread the prawns on to the skewers along with the peppers. Drizzle any excess marinade over them and the broccoli. Grill on the BBQ, turning regularly until charred and cooked through.

Warm your flatbreads on the BBQ and serve as pictured.
