Apple Oat Pancakes

As it's pancake day, here it is! Your healthy, bike ride fuelling breakfast. Perfect for a medium to tough day on the bike.

Ingredients:

75g Oats

2 tsp Baking powder

Pinch of Salt

1/2 tsp Cinnamon

1 Egg

300g Milk

1 tbsp melted Coconut oil

1 grated Apple

180g Flour

Toppings of your choice. I used flaked almonds, raisins, maple syrup and greek yoghurt.

Method:

Tip the oats in to a blender, blitz until it looks like flour.

Add everything else except the apple and flour, whiz it up again.

Now add the flour and apple. Use a spatular to mix it all together.

Heat a pan on medium heat and lightly oil. Add a couple of TBSP of batter for each pancake. Once you start to see bubbles around the edge, flip the pancakes.

When cooked, keep on a plate or tray, in the oven on a very low heat, to keep warm while you cook the rest.

Serve with your favourite toppings.
