Fish Tacos

Fish is such a great sorce of protein, particularly omega 3 rich salmon. Get more in to your diet with this super easy mid week meal.

A couple of mini corn tortillas make this a low to medium carb meal. You can make it high carb with the addition of rice.

Serves 2

Ingredients:

1 red onion 2 limes 2 salmon fillets 2 tsp Mexican spice rub Handful of cherry tomatoes 1 tbsp jarred jalapeños Coriander 1 small tin sweetcorn Tabasco sauce 4 mini corn tortillas 1 avocado 1 little gem lettuce Feta cheese Hot sauce

Method:

Slice onion in to 1/2 moons. Place in bowl with salt and lime juice.

Heat oven to 200 (fan). Put fish on a roasting tray. Sprinkle on the Mexican spice mix and salt. Drizzle with oil. Roast for around 8 min until cooked through and flakey.

Chop the cherry toms, jalapeños, coriander and mix with a tin of drained sweetcorn. Season and add juice from 1/2 a lime and a dash of tabasco.

Smash an avocado with salt and add juice from 1/2 a lime.

Finley slice up a gem lettuce. Crumble up some feta cheese. Plate up as pictured and serve with your favourite Hot Sauce.
