BBQ Beef Kofta

Make hay while the sun shines with this iron rich beef kofta. With the flat bread you have a medium carb option, loose it for a low carb meal.

Serves 4

Ingredients:

500g of beef mince

2 teaspoons Middle Eastern spice (eg ras el hanout)

4 cloves of garlic, crushed

1 gem lettuce, shredded

4 flat breads

Pot of hummus

Handful of cherry tomatoes, chopped

1 red onion, diced

2 tbsp red wine vinegar

1.5 tbsp pomegranate molasses

Crumbled feta cheese

Hot sauce

Pickles

Sumac

Method:

For the koftas, place the mince, spice and garlic in a bowl. Loosely mix everything together. Then with wet hands, quarter the mixture and shape on to a skewer. Leave in the fridge to firm up.

Add the tomatoes, onion, vinegar, molasses and a good pinch of salt to a clean bowl. Leave to marinade while you prepare everything else.

Lightly spray the koftas with oil and season, then, on the BBQ (or griddle pan if it's raining again), cook the koftas, only rotating when there's a nice charred crust on the outside. Keep doing this until cooked through. Once cooked warm the flat breads on there too (if using).

Plate up as pictured, with the drained tomatoes and onions and all the extras. It's like a healthy version of a burger with a middle eastern twist!
