Baked Eggs Protein Hit
Many athletes struggle to find nutritious protein rich snacks without reaching for that pre packaged "protein bar". Well whip up a batch of these. You'll get your protein hit along with all those great nutrients that are in real food!

Baked Eggs.
Makes 8.
1 carrot grated
8 eggs
1 finally sliced spring onion
1 handful of coriander chopped
1 piece of ginger grated
1 teaspoon of coriander seeds
1 teaspoon of cumin seeds
1 teaspoon of curry powder
Pinch of salt and pepper
Pre heat your oven to 170 or 150 fan.
Whisk the eggs with a fork and add all the other ingredients.
Spray a muffin tin with non stick spray and pour in the mixture.
Bake for 15 min. Pop them out after 5 min and place on a cooling rack. Keep in the fridge.
