Middle Eastern Lamb Burger
Everyone loves a burger. Here a little twist on the classic. Packed full of nutrient rich veg it's a healthier alternative packed with flavour.
Make sure you have this on a training day. You've earned it.
Ingredients:
400g lean mince lamb
1/2 diced onion
crushed clove of garlic
handful chopped pistachio
handful chopped parsley and coriander
1 chopped chilli
1 tbsp Moroccan spice mix (ras el hanout)
good pinch of salt and pepper
1 aubergine sliced
1 courgette sliced
1 red pepper sliced
2 tbsp of za'atar
2 tbsp tahini
3 tbsp mayo
1 lemon
Burger buns
Method:
To make the burgers mix all the ingredients together by hand. Once it comes together divide in to protions, use your hands to make a patty. Leave in the fridge to firm up.
Pre salt your aubergine to remove some moisture. Dry with kitchen towels.
To make the tahini mayo just mix the ingredients together with a good pinch of salt. Add more or less lemon to taste.
Lightly oil, season then grilled your sliced veg and season with za'atar. The same with your burgers.
Lastly build your burger!
