Granola

Most shop bought varities are full of sugar. Make your own healthier version and dress it up with whatever you fancy. Nutty, fruity, it's your call.

Ingredients:

250g whole rolled oats

2 tsp cinnamon

pinch of salt

75g coconut oil

75g honey

120g chopped mixed nuts

couple of handfuls of dried fruit

sprinkle of mixed seeds

Method:

Pre heat your oven to 180.

In a small sauce pan add the oil and honey. Put on a low heat and wait until it's liquid. Add the salt and cinnamon.

Pour your oats and nuts in to a large bowl. Now mix in the warm liquid. Coating evenly.

Get a large baking sheet and cover with greaseproof paper. Spread the oats out evenly and bake for 35 minutes. Stir half way through.

When it's nice and evenly browned removed from the oven and scatter over your fruit and seeds. This is also a great time to customise it. Add whatever you fancy. Another alternative is toasted coconut and cacao nibs.

Store in an airtight container.

A great way to use it would be a bowl of greek yoghurt or skyr topped with seasonal berries then a handful or two of granola.
