Thai Salmon Noodles
Barely any cooking at all required! Super simple to knock up and a rest day winner, with the addition of low carb noodles. Salmon is truly a super food, packed with lots of beneficial omega 3, vitamins and minerals.

Serves 2
Ingredients:
2 pieces of Thai Seasoned Salmon (I bought mine pre done)
Handful of green beans
Handful of frozen peas
Pack of zero carb noodles (I used bare naked)
2 tsp Thai red curry paste
1 tsp fish sauce
Juice from 1/2 a lime
1 tsp honey
2 tsp sesame oil
1 mango
2 spring onions
Handful of chilli peanuts
Small bunch of coriander
Thai chilli sauce (optional)
Method
Create a little parcel for your Salmon fillets then place in an oven pre heated to 200 degrees for 20 to 25 minutes, until it's cooked through and flakes.

In a pan of boiling water simmer your beans for 4 minutes. Once 4 min is up, add the peas for 2 minutes.

Once cooked drain in a colander over your low carb noodles. No need to cook them.

Make your dressing by combining the paste, fish sauce, lime, honey and sesame oil. I whizzed mine up in a mini blender.

Prep all your other ingredients as shown.

Add your dressing to the noodles and toss it together.

Add the dressed noodles to your serving plate. Flake chunks of your cooked salmon over the noodles followed by the other ingredients that you prepped. Enjoy!
