Shakshuka


Serves 1

Ingredients

1/2 an onion, finely sliced

Thumb sized piece of njuda or chorizo diced

1 clove garlic

4 or 5 chopped cherry tomatoes

2 spears of tendersteam broccoli diced

1 egg

And to top:

A small amount of feta cheese, chilli sauce, fresh coriander.

Method

Get a small saucepan with a lid on a low heat. Add about a tbsp of olive oil. Add the diced onion a good pinch of salt and then let the onion soften, for about 5 minutes.

Add your spicy sausage and let those flavoursome oils eek out. After a couple of minutes add the garlic. Give it a minute then add the tomatoes and broccoli.

Add the tinned tomatoes or your home made tomatoe sauce to the pan. Cover with a lid and let the fresh tomatoes soften for about 5 minutes.

Once the time is up crack an egg in to a ladle. Now place the ladle in the middle of the sauce to make a dent. Twist the ladle so that the egg fills the dent and remove the ladle. Cover with the lid again and leave the egg to cook. Itll take about 4 minutes for a runny yolk.

Top with fresh coriander, feta cheese, fresh chilli or a chilli sauce.
