Super simple Thai beef salad

No cooking required. This is a great summer recipe that can be made in minutes if you have some left over BBQ beef. If not fry up a nice steak.

This can be made high or low carb depending on the noodles used. It's packed full of the good stuff to keep the body in check!


  • Rice or low carb noodles

  • 1/2 cucumber

  • 1/2 carrot

  • Handful mange tout

  • Handful broccoli florets

  • Around 200g of leftover BBQ beef (or fry up a steak)

  • Few mint and coriander leaves

  • Handful of Thai spiced peanuts

  • Handful bean sprouts

  • Hot sauce of choice


  • 2 Tbsp lime juice

  • 2 Tbsp fish sauce

  • 2 Tbsp soy sauce

  • 1 Tbsp sugar

  • 3 Tbsp sesame oil

  • 1 Tbsp sweet chilli sauce

You don't really need a recipe for this. It's more of an idea.

Use any crunchy veg you have and speed peel it nice and thin.

Stir fry some other greens.

Use a crazy sharp Japanese knife to slice your meat super thin. Or use a mandolin.

Stick all dressing ingredient in an empty jar and shake to emulsify.

Garnish with whatever you fancy!
