1 Pan Prawn Linguini

The hectic nature of training, working and family life can mean there’s often no time to ‘slave over the stove’, making for poor meal choices through convenience food. This dish is designed to prevent that! It could not be easier, everything in 1 pan, come back 10 minutes later and dinner is severed. A great high carb option for fuelling tough days on the bike.


340 g Linguini

340 g Cherry Tomatoes

1 Onion, finely sliced

4 cloves of Garlic, finely sliced

2 springs of Basil (extra leaves to garnish)

2 tbsp Olive Oil

1 tsp course sea salt

1 tbsp of Capers

½ tsp Chilli Flakes

1 litre Water

200g Prawns (pre cooked)

1 Lemon, juiced

1 handful Rocket


In a pan wide enough to lay your linguini flat, combined all the ingredients up until the prawns. Bring to a boil while stirring for the first few minutes, to stop the pasta sticking. Simmer for 9 minutes, until the pasta is al dente and the sauce the consistency you desire. Stir through the prawns to warm through along with the lemon juice. Test the seasoning, adjust as necessary and plate as pictured. Finish with a little drizzle of olive oil.
